Apple Butter Cookies

These apple butter cookies are perfectly suited for the fall time, though I've been known to make them anytime of the year. The chewy, soft texture paired with the apple flavor makes for an irresistible cookie!

  • Stand or hand mixer optional

Ingredients
  

  • 1/4 cup unsalted butter room temperature
  • 1/2 cup white sugar
  • 1/2 cup brown sugar
  • 1/2 cup apple butter
  • 1 egg
  • 1 tsp vanilla
  • 1 3/4 cups all purpose flour
  • 1/2 tsp ground cinnamon
  • 1/2 tsp cream of tarter
  • 1/2 tsp baking soda
  • cinnamon sugar for rolling the cookies before baking

Instructions
 

  • Preheat oven to 375° 
  • Combine butter, sugar and apple butter on low speed.
  • Increase speed and beat for about 30 seconds. Occasionally scrape down sides of the bowl to make sure everything is combined.  
  • Add egg and vanilla and continue to combine. 
  • In a medium bowl, combine the dry ingredients. 
  • Slowly add the dry ingredients to the wet mixture and combine until a dough forms. Don’t forget to scrap the sides of your bowl. 
  • Cover and refrigerate for at least 2 hours. This makes the dough easier to work with for the next step. 
  • Form dough into 1.5 - 2 inch balls and roll them in the cinnamon sugar.  
  • Place them onto an ungreased cookie sheet 
  • Bake 12-14 minutes.
