Apple Butter Cookies
These Apple Butter Cookies are perfectly suited for the fall time, though I’ve been known to make them anytime of the year. The chewy, soft texture paired with the apple flavor makes for an irresistible cookie!
How-To Make Apple Butter Cookies
First, preheat your oven to 375°
You can use a stand mixer for this recipe but it isn’t necessary. Instead, use a handheld mixer or simply mix with a spoon. In a large bowl combine the sugar and apple butter on low speed.
Increase the speed and beat for 30 seconds. Scrape down the sides of your bowl to be sure everything is incorporated.
Add your egg and vanilla and continue to combine.
In a separate medium bowl, combine your dry ingredients.
Slowly add your dry ingredients into your wet ingredients and combine until a dough forms. You may need to continue scraping down the sides to be sure everything is incorporated.
This will be a very sticky dough. I recommend refrigerating your dough for 1.5-2 hours. This will make it much easier to work with.
After your dough has chilled, form dough into 1.5-2inch balls and roll them in your cinnamon sugar.
Place them onto an ungreased cookie sheet and bake for 12-14 minutes.

Very good cookies! I made them with honemade vanilla extract & apple butter. They are a different texture. Almost like a muffin in a cookie. I will be making more for Thanksgiving get togethers. I will leave them in the fridge overnight next time. 2 hrs chilled & they still got sticky fast.
Yes they can get sticky. It’s tough because apple butter varies in viscosity so the dough will vary. If you find your dough is very sticky, chilling it will help. Wetting your fingers will also help it not stick to you. Thank you!
