How to Make Sausage and Potato Soup
Original Method
In a pot or large skillet, brown your sausage. You can use Italian sausage, breakfast sausage, Andouille sausage, etc.
Remove the sausage but leave some of the drippings to sauté the onions and garlic.
Sauté the onions and garlic until translucent and fragrant.
Add the paprika, salt and pepper to the onions and garlic.
Add a splash of broth and deglaze the bottom before adding the rest of the broth.
Put the chopped potatoes into the broth, cover and let simmer for 10-15 minutes, until the potatoes are tender.
After the potatoes are tender, add the milk and let it simmer until desired consistency is reached.
Holiday Leftover Method
Sauté onions and garlic in butter until translucent and fragrant.
Add the paprika, salt and pepper to the onions and garlic.
Add a splash of broth and deglaze the bottom before adding the rest of the broth.
Roughly one cup of mashed potatoes will work well. Whisk that into the broth.
Add the milk and ham and let the soup simmer until desired consistency is reached.
Serve this soup with leftover dinner rolls or crusty bread for optimal deliciousness!

- 1 onion chopped
- 1 clove garlic minced
- 1 pound sausage
- 2 large potatoes or four small potatoes – chopped
- 2 pints beef broth
- 2 tsp smoked sweet paprika
- 1/4 cup whole milk or heavy cream
- 1/2 tsp salt
- 1/4 tsp pepper
